I'm afraid that unless experts in granite, marble, etc. tell you otherwise, granite is porous, coffee absorbed at a deeper level than a surface stain would be considered for removal by sanding and polishing.

But you can try for stains from organic foods such as tea, coffee or fruit, combine hydrogen peroxide (about 12×100) with 2 drops of ammonia.
