Is it possible to panel an unheated room during the cold season?

Are there any hidden consequences? Won't there be condensation inside? I don't want to stand idle in the winter.

Last winter I trimmed the second floor with linings and put euro board floors on the old floor. The summer passed – did not notice any special changes. Of course in the spring the linings were covered with Senege, and the floors with parquet varnish. This winter I plan to panel the first floor. It will be heated once a week on weekends. I think it will be fine.
